Ingredients

diced white onion

rotisserie chicken

pepper jack cheese

(8oz) package cream cheese, cubed

tablespoons
heavy cream

lime
, juiced

fresh cilantro
, chopped

(8 inch) whole wheat tortillas
olive oil spray
Instructions
In medium saucepan add olive oil, onion, peppers, tomatillos, salt, and pepper.
Cook on medium heat for 8 minutes or until onions are cooked through.
I let everything caramelize just a little.
Add shredded chicken
Add heavy cream and cheeses.
Reduce heat to low.
Allow cheeses to melt.
Remove from heat.
Stir in cilantro and lime juice.
Spray cast iron pan or griddle with olive oil spray.
Fry tortillas until slightly browned on both sides.
Add 2 to 3 tablespoons chicken mixture to tortillas and roll while still warm.
