So..I made these in a hurry and didn’t have time to properly photograph them. I thought they were worth sharing anyway 🙂

Christmas cookies are so fun to make and this is one of my favorite recipes!

They are easy to make and taste like a bite-size brownie with fudgy icing, salted caramel, and toasted pecans..The icing is amazing although it needs a little time to set up. I would recommend 3-4 hours or overnight. My Peppermint Hot Chocolate would go great with these! This will be my last Christmas recipe. Next will be healthy recipes for January.

Chocolate Fudge Turtle Cookies + Salted Caramel Drizzle

Ingredients

  • 1 box double chocolate fudge cake mix
  • 1 tbsp water
  • 2 tbsp oil
  • 2 eggs
  • 2 cups whole pecan halves

Instructions

  • Combine cake mix and next three ingredients. Mix well.
  • Line a baking sheet pan with parchment paper. Arrange pecans in clusters of three.
  • Shape dough into approximately one inch balls. I used a small cookie scoop which made this really fast. Center each ball on one pecan cluster.
  • Bake at 350 degrees for 8-10 minutes. Let cool and spread with chocolate frosting.
  • Chocolate Frosting:
    1 Tablespoon oil
    2 Tablespoons baking cocoa
    1/2 teaspoon pure vanilla extract
    1 cup powdered sugar
    2 Tablespoons milk
  • In small bowl combine all ingredients adding milk alternately until it reaches a good spreading consistency.
  • Spread each cookie with frosting. Cut the corner from a ziplock bag. Pour about 4 Tablespoons Salted Caramel into bag. Snip the corner and drizzle onto each cookie. If not using caramel a small sprinkle of salt across the top of each cookie is great also!
