Cheesy Bacon Mashed Potato Bake is a very easy recipe that is full of flavor from the butter, potatoes, bacon, and cheese!

Cheesy Bacon Mashed Potato Bake

My favorite mashed potatoes are not the ones that you eat along with the turkey(although they are delish) but, the leftovers that can be turned into this cheesy bacon goodness! Who can resist butter and bacon with a little splash of heavy cream 😁.

How to make cheesy bacon mashed potatoes.

  • First of all, this recipe focuses on using leftover mashed potatoes. They should already have butter, milk, or whatever you put in them.
  • I usually warm them just a tad in the microwave or oven because they can be difficult to deal with straight out of the refrigerator.
  • After they are warm I add about 2 tbsp. of melted butter, and maybe 1/4 cup of heavy cream along with the bacon and whatever seasonings you would like to add. Rosemary is always good with potatoes!
  • I use a Kitchen Aid mixer to whip them up. You can stir everything together by hand but, use the mixer if possible because they turn into smooth, creamy, and light potato magic somehow…
  • Cheesy bacon mashed potato bake can be made from scratch. Boil 6-8 Yukon Gold potatoes and make mashed potatoes as you normally would. Only add the extra butter and cream if needed. Add the bacon and cheese as directed.

A delicious way to use up leftover mashed potatoes. They are smooth and creamy with the irresistible combination of cheese and bacon. It’s a baked potato in a bowl!

Ingredients

  • 6 cups leftover mashed potatoes, warmed
  • 2 tbsp melted butter
  • 1/4-1/2 cup heavy cream
  • 8 slices bacon, cooked and crumbled
  • 1/2 tsp black pepper
  • 2 cups colby monteray jack cheese, grated

Instructions

  • Preheat oven to 350 degrees. Lightly spray 6 ramekins or one 9 inch casserole dish with olive oil spray.
    Slightly warm mashed potatoes in microwave or oven.
  • Add potatoes, butter, and cream to a mixer bowl. Mix until potatoes are light and creamy. 
  • Stir in bacon and black pepper.
  • Fill each ramekin or casserole dish and top with the freshly grated cheese.
  • Bake for 15-20 minutes or just until bubbly and lightly browned.
