Marinated Black Eyed Pea Salad

Marinated Black Eyed Pea Salad is full of crunch, color, and spiciness from the peppers. Adding a little sweetness from the red pepper jelly and creaminess from the peas makes this salad a must have!

Black eyed peas may be considered a little bleh but, if you would like a bit of luck in 2016 I recommend that you make this marinated black eyed pea salad! And it is everything besides bleh. It’s crunchy munchy goodness is a definite improvement over the ketchup that I usually pour over black eyed peas:)

I’m trying really hard to up my vegetable game lately. I love veggies but, sometimes it is really hard to take time to make healthy food. This pea salad can be made on Sunday and enjoyed throughout the week, it really just seems to taste better after a day or so. Yay for meal prep!!

Ingredients

  • 1 (16-oz.) package dried black-eyed peas
  • 1/2 cup red pepper jelly
  • 1/2 cup red wine vinegar
  • 3 TBSP olive oil
  • 1 jalapeno pepper , seeded and minced
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1 cup diced red bell pepper
  • 1/2 cup red onion
  • Salad Greens (optional)

Instructions

  • Cook peas according to package directions just until done.
  • Drain peas and run cold water over until cool. Drain.
  • Mix remaining ingredients into peas.
  • Cover and chill overnight.
  • Serve over a bed of greens(optional)

    I love black eyed peas and I love pepper jelly but I’ve never thought about combing the two.
    Do you make your own jelly or do you have a brand you like?
