Blueberry Crisp

Sooo, who wants dessert that can be thrown together at the last minute. And it is just the right amount for two people? I honestly Want dessert that I can eat for breakfast and dinner all week long, haha:) But, I don’t always need all that temptation sitting around. Recipes just for two people are not that easy to find, at least not a huge variety of them. I am attempting to create a few Easy dessert recipes “just for two”! I will be sharing them here if they end up being as easy and tasty as this Blueberry Crisp recipe is!:)

I could honestly eat all these blueberries just like this;) And the colors in this photo are two of my favorites together..

The Crisp topping at the perfect crumbly stage. You just might have to get your hands in there to get it perfect.

Pile the topping high and pack it down. Add a final sprinkle of cinnamon across the top.

Cook until just lightly brown and bubbly. Grab your favorite person and enjoy:)

Blueberry Crisp

Ingredients

  • TOPPING
  • 1/2 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup light brown sugar
  • 1/4 cup chopped pecans
  • 1/2 stick butter , softened
  • Sprinkle of cinnamon
  • COBBLER
  • 1/4 stick butter , chopped
  • 1/4 cup white sugar
  • Juice of 1/2 lemon
  • 2 cups fresh blueberries
  • 1/4 teaspoon cinnamon

Instructions

  • Preheat oven to 350 degrees.
  • For topping mix all ingredients by hand until everything is incorporated, refrigerate until needed.
  • Mix blueberries,sugar, lemon juice, and cinnamon.
  • Pour blueberry mixture into 2 oven safe ramekins.
  • Dot with cold butter pieces.
  • Layer topping over all.
  • Put ramekins onto a baking sheet in case of spills.
  • Bake for 20 to 25 minutes.
  • Allow to cool for 10 minutes before serving.
  • Serve with whipped cream or vanilla ice cream.
