Fruit Fudge Popsicles


Yesterday was National Ice Cream Day and to celebrate I made these fudge fruit filled popsicles!
Gee, these babies are good! This was the first time that I have made homemade popsicles and, I really don’t know why I haven’t been. Can’t wait to make all the flavor combo’s that I can dream up or find recipes for:)

Fruit Fudge Popsicles

Ingredients

  • 4 teaspoons cornstarch
  • 3 cups whole milk
  • 2 cups heavy cream
  • 1 cup sugar
  • 1 cup unsweetened dutch process cocoa powder
  • 1/2 teaspoon fine salt
  • 2 teaspoons vanilla extract
  • Sliced bananas
  • Raspberries

Instructions

  • In medium sauce pan whisk sugar, cocoa powder, salt and cornstarch together.
  • Gradually add milk and cream.
  • Whisking to combine well.
  • Allow mixture to come to a boil over medium heat.
  • Cook 2 to 3 minutes, whisking.
  • Remove from heat and add vanilla extract.
  • Allow to cool for about 10 to 15 minutes.
  • Add fruit to bottom of mold. You may need to chop into small pieces.
  • Pour mixture into popsicle molds.
  • I pushed some fruit down into the mold after filling. Just make sure to allow room for this.
  • Freeze for 4 to 5 hours or until completely firm.
