<p>Black eyed peas may be considered a little bleh but, if you would like a bit of luck in 2016 I recommend that you make this marinated black eyed pea salad! And it is everything besides bleh. It’s crunchy munchy goodness is a definite improvement over the ketchup that I usually pour over black eyed peas:)</p>
<p>I’m trying really hard to up my vegetable game lately. I love veggies but, sometimes it is really hard to take time to make healthy food. This pea salad can be made on Sunday and enjoyed throughout the week, it really just seems to taste better after a day or so. Yay for meal prep!!</p>
