<p><em>Peach and Tomato Salad with White Balsamic Vinaigrette is made up of fresh peaches, mini cucumbers, cherry tomatoes, feta cheese(optional but I love it!) and the most delicious vinaigrette dressing. Also, homemade croutons are so good with this!</em></p>

<p>I don’t know why tomatoes and peaches go so well together! I’m sure this is probably a southern thing ð. Southern or not it is one of my favorites…this was lunch for me a couple of days in a row last weekend. The peaches look just like they do in my photos for at least two days. The vinaigrette keeps them from turning dark. They may stay fresh for up to three days but it doesn’t last that long around here!</p>

<h2 class="wp-block-heading" id="h-tips-for-making-peach-and-tomato-salad">Tips for making Peach and Tomato Salad</h2>



<ul class="wp-block-list">
<li>I used yellow cling-free peaches that were still slightly firm. I scrubbed them and left the skin on.</li>



<li>And I used <a href="https://fave.co/2yjXE6P">this white balsamic </a>vinegar it paired perfectly with the peaches.</li>



<li>Feta cheese mixed into the salad can end up looking kinda gross so adding a sprinkle to each serving works perfect! Does anyone else feel like the block of feta is less flavorful(strong) than the pre-crumbled feta?? Anyway, I use the block and like it so much better!</li>



<li>The cucumbers that I used for this recipe were mini cucumbers but any variety will work ;) The same goes for the peaches and tomatoes! </li>
