Peanut Butter Cheesecake Pie

Peanut Butter Cheesecake Pie is topped with ganache and toffee. The best combo of sweet and salty!

Why Peanut Butter Cheesecake Pie is the best pie Ever

That is pretty obvious! This pie is made of peanut butter and chocolate. Also, it is a cheesecake that you don’t have to bake. Nothing else needs to be said except that the toffee sprinkles on top are the icing on the cake so to speak 🙂

There is only one thing that I can think of that may make this cheesecake pie even better and that is a chocolate graham cracker crust. I haven’t tried that yet but I think that I will next time! Oreos would work just fine too!

I don’t know why but, I just recently discovered chocolate graham crackers… have they been around all along??🤩

I’m pretty sure that this pie is the cure for  which is probably the main reason that it is the best ever… Not a fact, just my opinion 🙂

Happy Monday!

Ingredients

  • 2 9- inch graham cracker pie shells
  • 2 8 oz packages cream cheese , softened
  • 1 cup sugar
  • 1 cup creamy or crunchy peanut butter ( I used creamy)
  • 8 oz . whipping cream , whipped
  • 2 tablespoons sugar ,optional
  • 1 teaspoon vanilla
  • For The Topping:
  • 2 cups chocolate chips
  • 1 cup heavy whipping cream
  • pinch of salt
  • 1 cup Toffee Bits (optional)

Instructions

  • In large chilled mixer bowl whip cream, sugar, and vanilla until soft peaks form.
  • Remove from bowl and mix cream cheese and sugar until creamy.
  • Mix in peanut butter.
  • Add whipped cream and fold into peanut butter mixture until completely combined. I used the mixer for this because it is a large amount and hard to do by hand.
  • Pour into pie shell/s. This recipe makes one deep dish pie or two 9-inch regular pies. The deep dish is what is pictured above and the link to the deep-dish pie plate that I used is linked below.
  • For the Topping:
  • Bring 1 cup heavy whipping cream and salt to a simmer(not a full boil).
  • Remove from heat.
  • Pour in chocolate chips. Let sit for a couple minutes.
  • Stir until smooth and shiny. Allow to cool.
  • Pour over pie and then sprinkle toffee bits around edges of pie if using.
  • Chill and keep in refrigerator.
