Watermelon-Strawberry Mint Slushie

A Watermelon-Strawberry Mint Slushie is made by blending watermelon, strawberries, mint/lime simple syrup, and crushed ice. They are refreshing and are a great way to cool off on a hot afternoon!

Who remembers Slush Puppies and are they still around?? I rarely go inside a gas station anymore 😄. They were the best on a hot summer day! These should be a smidge healthier with fresh fruit and no artificial colors.

We didn’t do anything much for Memorial Day because the hubs had to work. But, I did make Watermelon-Strawberry Mint Slushies! A great way to kick off summer 🌞.

What makes Watermelon-Strawberry Mint Slushie a slushie? 🤔

Well, Obviously it has to be the ice. The flavors can be anything under the sun but, the ice has to be blended until it is smooth but still identifiable as ice if you know what I mean? Don’t leave big chunks in there! A good blender is a must for this. My blender is not the best as far as value goes but, it does a pretty good job with the ice. The only way that my not so valuable blender will do this is when I use crushed ice. If I put regular ice cubes in there it just doesn’t result in a really smooth blend.

Fresh Fruit Flavors

The fresh fruits that are featured in this drink are watermelon, strawberries, and lime juice. I also made a fresh mint simple syrup for the sweetener.

There were lots of leftover watermelon and strawberries so that ended up being a fruit salad-it was delicious with the lime juice and mint simple syrup drizzled over it.

Why mint simple syrup?

Simple syrup is the best way to sweeten drinks because the sugar is already melted and it seems to be easier to control the amount of sweetness. I added mint to this just so that I could really get the mint flavor in there but not too strong. Blending the mint leaves into the slushie is also an option. Be prepared for that mint flavor to really pop if you go that route. If you need to reduce sugar use 6 tablespoons of stevia instead of the one cup of sugar.

Ingredients

  • 4 cups seedless watermelon, cubed
  • 2 cups strawberries
  • 1/2 cup mint simple syrup
  • 1/4 cup fresh lime juice
  • 2-3 cups crushed ice

Instructions

  • Add all ingredients to a blender and blend until completely smooth.
  • Pour into 6 glasses and serve with fresh peppermint leaves(optional)
  • MINT SIMPLE SYRUP
  • 1 cup sugar
  • 1 cup water
  • 1/4 cup chopped peppermint leaves
  • Add all ingredients to a small saucepan and simmer for around 10 minutes. Allow to cool completely and strain out the peppermint leaves. The syrup is ready to use. Store the remainder in the refrigerator for up to 1 week. It is delicious in ice tea!
