White Chocolate Chip Peppermint Cookies

Ingredients

self-rising flour

(2 sticks) butter, softened

sugar

brown sugar

vanilla extract

large eggs

white chocolate chips
(ghirardelli)

white candy coating chips
(ghirardelli)

cup
soft peppermint candies
, crushed
Instructions
Preheat oven to 350 degrees.
Mix flour, baking soda, and salt; set aside.
In large bowl of mixer, beat butter with sugar and brown sugar at medium speed until creamy.
Add vanilla and eggs, one at a time, mixing on low speed.
Gradually add dry ingredients; blend on low speed.
Stir in white chocolate chips.
Refrigerate until dough is firm(optional)
Drop onto ungreased cookie sheet.
Bake for 10 minutes or until golden brown.
Allow cookies to cool 20-30 minutes.
In microwave safe bowl, melt candy chips in 30 second increments until melted.
Stir until completely smooth.
Dip half cookie into candy coating, shake excess off .
Sprinkle peppermint pieces over candy coating.
Allow to cool on wire racks.
