Add all ingredients except okra to a large stock pot(I use a cast iron pot). Cook on low/medium heat for 1-2 hours. Stirring occasionally. Stir in okra about 5 mins before done.
Taste test and adjust seasonings accordingly. Remove bay leaves before serving. This always tastes even better the next day!
Notes
I find the 20 0z. package of potatoes in the refrigerated section of the grocery store with the grated hashbrown potatoes. If not using the seasoned potatoes I would suggest adding more salt, pepper, and/or red pepper flakes. Adjust to taste preference.
