In a large mixing bowl stir all ingredients until completely combined.
Brush cast iron frying pan or griddle with olive oil or butter. Turn heat to med/low.
Scoop about 1/2 cup potato mixture for each pancake into pan. Do not crowd too close together. Cook on low heat for about 10 minutes, each side. Low and slow allows them to cook all the way through without burning on the outside. This takes longer but is so worth it!
Pile on a plate and keep warm in the oven. Serve immediately with sour cream :)
