6cupsleftover mashed potatoes, warmed
2tbspmelted butter
1/4-1/2cupheavy cream
8slicesbacon, cooked and crumbled
1/2tspblack pepper
2cupscolby monteray jack cheese, grated
Instructions
Preheat oven to 350 degrees. Lightly spray 6 ramekins or one 9 inch casserole dish with olive oil spray.Slightly warm mashed potatoes in microwave or oven.
Add potatoes, butter, and cream to a mixer bowl. Mix until potatoes are light and creamy.
Stir in bacon and black pepper.
Fill each ramekin or casserole dish and top with the freshly grated cheese.
Bake for 15-20 minutes or just until bubbly and lightly browned.
