Peach and Tomato Salad with White Balsamic Vinaigrette
A refreshing salad starring peaches and tomatoes. The tasty vinaigrette is what brings it all together!

peaches, sliced

cherry tomatoes halved

french bread cubes, toasted

white balsamic vinegar

extra virgin olive oil

honey

dijon mustard

Italian seasoning

garlic powder
salt and pepper to taste

feta cheese, crumbled for serving
Instructions
Preheat oven to 350 degrees
Toss cubed french bread with olive oil and a sprinkle of garlic powder.
Layer bread cubes in a parchment-lined baking sheet and bake just until golden brown.
Add all of the vinaigrette ingredients to a large bowl and whisk together.
Add the peaches, tomatoes, and cucumbers and toss with the vinaigrette.
Chill until time to serve. Top each serving with feta cheese and bread cubes.
Keep remaining salad in the refrigerator for up to two days. Peaches will stay fresh at least that long if not longer.
