Watermelon Salad – simple but so yummy!:)
- blackberries or blueberries
- Spring greens
- fresh mozzarella
- tomatoes, cut in half
- watermelon cubes
I am a huge fan of homemade salad dressings or vinaigrettes. This one of course is one of my favorites.
The recipe starts out with a crock pot of all things but, that actually makes everything so much easier. And I have a big batch of flavored blueberry juice that can either be made into this vinaigrette, pancake syrup, jelly, a drink by adding a little brandy, or whatever else that can be dreamed up:) It went perfectly with the watermelon salad that we made on Memorial Day!

- 6 cups blueberries
- 2 bay leaves
- 1 lemon, zested
- 1/2 cup maple syrup
- 2 tsp dijon mustard add according to taste
- 1 cup blueberry juice
- 1/4 tsp salt
- 1/4 cup olive oil
- 1 tbsp sugar
- 1/4 cup vinegar add according to taste
Add blueberries and sugar to crock pot. Mash with potato masher.
Stir in 1 quart of water, bay leaves, and lemon zest.
Cover and cook on low heat for 2 1/2 hours. Stir, increase heat to high and cook for 1 hour more.
Strain through fine mesh sieve to remove all solids.
Stir maple syrup into blueberry juice and cool. Refrigerate up to 1 week. If adding brandy use 1 1/4 cups and keep refrigerated up to 1 month.
Add dijon mustard, olive oil, salt, sugar, and vinegar together and shake well or pulse a couple times in blender.
