Ingredients

granulated sugar

butter
, softened or room temp.

large eggs

sour cream

teaspoon
vanilla bean paste or vanilla flavoring

tablespoon
lemon zest

fresh lemon juice

cups
self-rising flour

cups
fresh strawberries
, diced
Instructions
Preheat oven to 350 degrees.
Line muffin pan with paper liners or butter and then sprinkle with flour and tap out any extra.
Cream sugar and butter in large mixer bowl.
Add eggs, one at a time. Mix well.
Add sour cream, vanilla bean paste or vanilla flavoring, lemon juice and zest.
Mix in flour 1 cup at a time, mixing just until incorporated.
Stir in diced strawberries.
Pour batter into muffin pan filling 3/4 full.
Bake for 18 to 20 minutes until golden brown and wooden pick comes out clean.
