Crispy Chicken Thighs + Lemon Artichoke Sauce

Staying home for Valentine’s Day? Crispy chicken and a lemon artichoke sauce over noodles or rice is Perfect for date night at home 🙂

I used thick homestyle egg noodles for this meal and they were sooo good!

Crispy Chicken Thighs + Lemon Artichoke Sauce

Sometimes life hands us a whole pile of lemons… which makes it hard to just do life each day. Getting out of bed and showing up wherever you are suppose to be that day or even just communicating with people in general can seem like an impossible task.

I’m just here to say- Don’t Give Up! Pain only makes us stronger and wiser in the end after all.

Crispy Chicken Thighs + Lemon Artichoke Sauce

Crispy Chicken Thighs + Lemon Artichoke Sauce

Ingredients

  • 4 chicken thighs or breast with skin and bone
  • 2 tbsp butter
  • 1 16 oz can artichoke hearts quartered
  • 3 tbsp all-purpose flour
  • 1 cup whipping cream
  • 1 lemon juiced
  • 1 large onion chopped
  • 1/2 tsp freshly cracked black pepper
  • 3 whole garlic cloves

Instructions

  • Melt butter in large skillet- I used a cast iron skillet for this. Brown chicken for about 5 minutes on each side and set aside.
  • Add flour, artichoke hearts, whipping cream, lemon juice, and onion to drippings in skillet.
  • Cook over low heat, stirring occasionally until sauce slightly thickens.
  • Add chicken back into sauce in skillet. Or transfer everything to a baking dish. Add whole garlic cloves to skillet/dish. I like to let them roast and add flavor during the cooking process. Chopping them up and adding to the sauce is also a option.
  • Cook in a 350 degree oven for about 45 minutes. Or until chicken is done. This should only take 25-30 mins for boneless chicken.
  • Remove from oven and serve immediately with hot buttered noodles or rice.
