Cucumber Sandwich Spread

Cucumber and cream cheese together with dill, red onion, and a few seasonings make a delicious combination of ingredients. Which is so good on cold cut sandwiches, and bagels. It also can be used for a dip to eat on crackers, naan chips, or crispy bagel chips of course!

Smoked salmon is great for appetizers and it just so happens that this Cucumber Sandwich Spread pairs perfectly with it!

Tips For Making Cucumber Sandwich Spread

  • Use Seedless English Cucumbers they are not required but your prep time is much shorter by using them. I peel and then grate them with a box grater. Slice regular cucumbers in half and remove the seeds with a spoon.
  • Grate the cucumbers into 3-4 layers of paper towels or cheesecloth, pull the edges up and twist. Repeatedly squeeze until no water runs out.
  • Green onions can be used instead of the red if you want a milder flavor.
  • Feel free to add a few drops of hot sauce or 1/4 tsp. of red pepper flakes to spice it up a bit!
  • This sandwich spread goes a long way when making appetizers!

Ingredients

  • 8 oz. package cream cheese , softened
  • 3 cups grated seedless cucumber
  • 1 tablespoon red onion, minced
  • 2 tablespoon mayonnaise
  • Salt and pepper , to taste
  • 1 tablespoon dill , chopped

Instructions

  • In medium size bowl mix cream cheese, mayo, salt, and pepper.
  • Mix until completely combined.
  • Peel and grate the cucumbers onto 3-4 layers of paper towels or cheesecloth. Gather all of the edges and twist at the top. Hold the twist and squeeze repeatedly to remove all water from the cucumber. You should most likely see a cup or more of water in the bottom of the bowl.
  • Finely chop the red onion.
  • Add cucumber, dill, and onion to cream cheese mixture.
  • Mix until completely combined.
