Ingredients
2cupspearl couscouscooked according to pkg directions
1/2English cucumber, sliced
1/2purple onion
1/2cupsliced black olives, drained
1cupcherry tomatoes, halved or quartered
1chicken breast, cooked and sliced
1lemon, juiced and zested
1/4cupolive oil
2tbspfresh dill, or dried
1/4tspsalt and pepper, or to taste
1/4cupfeta cheese, crumbled
Instructions
Cook couscous according to package directions. Drain and rinse with cold water.
Mix lemon juice and zest, olive oil, dill, and salt and pepper.
Pour over couscous and toss to coat.
Arrange veggies, chicken, and cheese over the pasta. Garnish with extra dill.
Toss right before serving. Keep tightly covered in the refrigerator for up to three days.
