Ingredients

, peeled, & mashed sweet potatoes

fig butter or fig jam

teaspoon
vanilla bean paste or 1 teaspoon vanilla extract

brown sugar
, adjust according to the sweetness of the fig butter/jam

butter
, room temperature

cinnamon

10x sugar

Instructions
In large mixing bowl combine sweet potatoes with next 6 ingredients.
Mix will.
Roll pie crust out flat and cut into desired shapes(circles, rectangles, ect.)
Center 1 tablespoon sweet potato mixture onto the center of the bottom half of each shape.
Layer the top crust over the filling, crimp edges.
Butter jellyroll pan or line with parchment paper.
Arrange tarts on pan.
Bake at 350 degrees for 15-20 minutes until lightly brown.
